Dinner

Sometimes I get the urge to make something a little more special than the ordinary dinner… today was one of those days. In southern Italy (or so I read), they make this fantastic dish using groper (or sea bass) by searing the fish in some olive oil, pile on this mixture of diced tomatoes, onions, some garlic and basil, and then stick it into the oven to finish. I routinely substitute grain-fed chicken breast in this dish. The prep time takes a while if you’re working without a food processor (like me) but it’s good practice for your knife skill. Really easy dish to make and the flavours are fanastic… it’ll impress most guests you bring home. Instead of spending the usual 30 minutes to make dinner tonight, I ended up spending an hour. Oh well, it was a nice, long and enjoyable dinner. In the picture you’ll also see some pasta: mini seashell pasta with a roated garlic, mushroom tomatoe sauce… pre-made, not by me of course because it’ll take too long! And a romaine lettuce salad.
